This recipe is a non-alcoholic variation on the famous Butterscotch Jello Shots. However, resist the temptation to add alcohol during your colonoscopy prep, since alcohol is strictly off-limits and can interfere with the procedure in serious ways.
However, when and if you can drink alcohol again, you might like to give the original boozy version a try. For the alcoholic version, you use Butterscotch Schnapps instead of butterscotch syrup, and swap the lemon juice for Vodka. Pour the jellies into shot glasses to set, and and for a touch of fun, decorate it with colorful sprinkles.
Sorry vegans, unfortunately this recipe is not for you, and you can’t substitute gelatin for agar-agar on a clear liquid diet because agar-agar has fiber.
Butterscotch Jello Bites recipe for clear liquid diet
Cooking Time: 20 minutes + 4 hours refrigeration time
Servings: 24 pieces
Ingredients
- 60mL butterscotch-flavored syrup
- 1 cup (240mL) cream soda
- 2 envelopes (1/2 oz / 14g) gelatin powder
- 30mL lemon juice
- 2 tsp vanilla extract
Method
- In a medium saucepan, combine the cream soda and gelatin. Rest for a few minutes, to allow it to soften.
- Gently heat the mixture over low heat, stirring constantly until gelatin has fully dissolved. Do not boil. Remove from heat.
- Stir in vanilla, lemon juice and butterscotch syrup. Taste and adjust the flavor as desired.
- Pour mixture into a mold of your choice. For example, 9×5 loaf pan with straight edges, jars or shot glasses.
- Refrigerate for about 4 hours or until the jello is completely set.
- Cut the jello into cubes and serve. Keep chilled.
