If you’re seeking comfort food, then the combination of pork and apple is hard to skip. Enjoy this heart-warming pairing, with this easy jellied consommé recipe.
I fondly recall the aroma and rich, salty flavors of pork and apple as a child, and am still warmed by the rustic memories that it evokes. Although we can’t enjoy a home-cooked pork roast with apple sauce during our clear liquid diet, you can have some semblance of those flavors with this easy pork and apple jellied consommé.
For the pork stock, you can choose to make your own, or purchase ready-made stock. Ready made stock will speed up the process, but if you have the time and inclination, a home-made stock will taste better. To make a homemade stock or soup base, you can substitute pork bones in our beef bone broth recipe.
You can choose to have this consommé as a clear soup without gelatin, but the gelatin adds a bit more substance as a dinner or lunch meal. The protein in the gelatin will also help your stomach feel more full than the clear soup alone will, while you’re preparing for your colonoscopy or recovering from surgery.
Easy Pork & Apple Jellied Consommé for Clear Liquid Diet
Cooking Time: 30 minutes, plus cooling time
Servings: 6
Ingredients
- 2 envelopes (2½ tsp) (14.22g) gelatin, unflavored
- ½ cup (125ml) cold water
- Salt and ground black pepper to taste
- 3 cups (750ml) pork stock, homemade or store-bought
- 4 Tbsp (56.7g) dry sherry
- ½ cup kale or spinach, coarsely chopped or torn into pieces
- 4 Tbsp (60ml) apple cider vinegar
- ½ tsp (3mL) lemon juice
Method
- In a small amount of water, soften the gelatin.
- In a medium saucepan, bring the stock to a boil.
- Add all other ingredients (except the sherry and the juice), and remove from the heat. Allow to cool slightly.
- Strain the liquid through a fine strainer or cheese cloth, to remove the spinach/kale. Discard or compost spinach/kale.
- Stir the softened gelatin into the consommé, until it is completely dissolved and combined.
- Add the sherry and lemon juice to the consommé, and mix well.
- Pour consommé into serving bowls or cups.
- Allow to cool, and serve at room temperature or cold*.
* Depending on the temperature and texture you want, allow it to cool to room temperature for a thick soup, or chill in the fridge for an hour or more for a fully jellied soup.
