This is a simple coconut water jello, with a delicate flavour, and rich in electrolytes to keep you hydrated during your colonoscopy prep and on hot days.
Coconut water is high in electrolytes (like sports drinks) and will help rehydrate you after intense physical activity such as sports or, ahem, clearing out your bowels. For this reason, coconut water is also helpful in alleviating mild diarrhea and keeping you hydrated during this time.
If you want to jazz up the recipe, you can use flavored jello powder or jelly crystals, instead of plain gelatin. Use mango flavored jello powder to make Mango & Coconut Water Jello, or pineapple flavored jello for Pineapple & Coconut Water Jello. You will need to adjust the sugar levels accordingly (or leave the sugar out). Remember not to use fresh pineapple juice, however, as it will prevent the jello from setting properly.
Hydrating Coconut Water Jello recipe for colonoscopy preparation
Cooking Time: 15 minutes + 4 hours refrigeration time
Serves: 8
Ingredients
- 4 cups (1L) coconut water, divided
- 2 packets (1/2 oz / 14g) gelatin powder*
- 2 tsp vanilla extract
- 4 Tbsp sugar
Method
- In a medium ceramic bowl, combine 2 cups (500mL) coconut water and 2 gelatin packets. Allow gelatin to soften for a few minutes.
- Meanwhile, place the remaining coconut water, vanilla extract and sugar in a saucepan over medium heat, constantly stirring until the sugar dissolves. Remove from heat.
- Stir in the gelatin mixture, until gelatin has fully dissolved and the mixture is smooth.
- Pour jello into a large serving dish or into individual serving glasses.
- Chill for at least 4 hours until set.
*For a different flavor, replace the plain gelatin powder with two packets of flavored jello powder (aka jelly crystals) such as mango or pineapple. You will need to adjust the sugar according, or leave it out entirely. Remember to avoid any red or purple colored jello, if you are preparing for a colonoscopy.
