This maple coffee slushie will give you a sweet energy boost, while keeping you refreshed.

The addition of coconut water, known to help with hydration in a similar way to sports drinks, will help you stay hydrated which is especially important when preparing for colonoscopy.

If you don’t like the coconut water, you can replace it with plain water. Just don’t add any dairy or other non-dairy milks, as per clear liquid diet requirements.

Remember to start making this a day or two ahead, so you are not caught out, as the mixture will need freeze overnight (or for at least 6 hours).

Variations: If you feel like a different flavor combination, you can swap out the maple syrup for any coffee syrup of your choice, such as hazelnut, caramel or Irish Cream flavored syrups (mmm… Irish Coffee Slushie, anyone?). Think of it like a frappe without the milk!


Maple Coffee Slushie

Cooking Time: 25 minutes + Overnight freezing

Serves: 4

Ingredients

  • 2 cups freshly brewed coffee, cooled to room temperature
  • ½ cup plain coconut water
  • ¼ cup real maple syrup

Method

  • In a jug or bowl, combine the coffee, coconut water and maple syrup.
  • Transfer liquid to ice cube trays, and freeze overnight. You could freeze it as one big block, but your blender will be happier if you freeze it into smaller pieces.
  • When ready to serve, transfer the frozen cubes to a blender or food processor, and chop until it forms a slushy consistency.
  • Divide the slushie between serving glasses, and enjoy.
