Bring restaurant flavors home with this traditional Miyabi Japanese Onion Soup. Deep umami flavors from the beef stock and mushrooms give this soup a homely, comforting feel.
It is also a great soup to keep your nutrient levels up during the clear liquid diet, with its combination of chicken and beef stock and vegetables. This is not miso soup. This is a different clear soup, and is safe to eat on the clear liquid diet.
When choosing mushrooms, make sure to choose good quality mushrooms such as shiitake or swiss brown, not those cheap white flavorless ones – they may cost more, but good mushrooms will make a good deal of difference in the overall flavor here.
The same goes for the beef and chicken stock – use a good quality liquid stock and preferably stay away from bouillon cubes. You can usually find good quality liquid stock in the supermarket. If you are vegan, some of these ‘beef’ and ‘chicken’ stocks are actually plant-based, meaning vegans could enjoy this soup too.
Miyabi Japanese Onion Soup for clear liquid diet
Cooking Time: 40 minutes
Servings: 10
Ingredients
- 5 cups beef broth
- 5 cups chicken broth
- 150g mushrooms, sliced*
- 1 large carrot, peeled and chopped
- 1 large onion, chopped
- 1 spring onion, chopped
- 2 garlic cloves, sliced
Method
- In a large stock pot, place beef stock and chicken stock.
- Add mushrooms, carrots, onion, spring onion and garlic to the pot.
- Bring to a boil, then lower the heat.
- Cover the pot, and simmer for 30 minutes.
- Remove from the heat and cool slightly.
- Strain the soup through a fine-mesh sieve, to remove vegetables.
- Line the sieve with cheesecloth, and strain the soup again through the cheesecloth, to pick up any remaining residue. Discard or compost vegetables and residue.
- Serve, or transfer to a jug or container and store in the fridge.
Cooking Notes
*Make sure to choose a flavorsome variety of mushrooms, such as shiitake, swiss brown or field mushrooms. The regular white mushrooms you find in the supermarket lack flavor and character, when compared with these other varieties. We want to make sure the mushrooms impart a good flavor, since we will be straining the mushrooms out of the final soup.
