Craving the comforts of a simple chicken and vegetable soup? Step away from broth, and try your hand at making chicken consommé with this easy recipe instead.

In your clear liquid diet guidelines you may have read that you can eat consommé. What is this fancy soup they call consommé?
It is actually not all that different from broth, except that egg whites are added to help clarify the soup (that is, make it clearer) and remove the fat.
You can experiment with the vegetables, as long as you steer clear of those vegetables not allowed on a clear liquid diet. This includes avoiding red/purple staining ingredients, and avoiding those that go mushy or cloudy in soup such as potato and pumpkin.
Chicken Consommé for clear liquid diet
Cooking Time: 1 hour 15 minutes
Quantity: 1½ quarts
Ingredients
- 8 cups (2L) chicken stock, home-made or store-bought
- 1 lb (450g) ground chicken
- 6 egg whites
- ½ cup onion, chopped
- ½ cup carrot, chopped
- 1/3 cup celery, chopped
- 4 Tbsp diced tomato
- Salt and pepper to taste
Method
- In a medium bowl, whisk together egg whites, onion, carrot, celery and tomato until slightly frothy. Mix in ground chicken.
- Pour chicken stock into a large saucepan.
- Whisk egg white mixture into the stock.
- Bring mixture to a slow simmer, constantly stirring in one direction with a wooden spoon. Stir for about 15 minutes or until ‘raft’—a reasonably solid layer on top of the liquid—begins to form. Reduce to slow simmer and stop stirring.
- After the raft forms, break a small hole in it to expose the liquid soup underneath (the consommé).
- Continue to simmer for 45 minutes or until the soup (beneath the raft) appears crystal clear.
- Strain through a fine-mesh strainer lined with cheesecloth, being careful not to break the raft.
- Discard raft and season consommé with salt and pepper.
- Serve, or transfer to jug and store in refrigerator.
