Tend to your gut health while preparing or recovering from your colon procedure with this clear liquid diet vegetable broth.

Loaded with vegetables and herbs that have been shown to support gut health in various ways, this healthy soup will also keep you feeling satisfied while on the clear liquid diet.
You can use any vegetables of your choice, however, be sure to stick with the Clear Liquid Diet Guidelines by Dr Akintomiwa when selecting veg. If you are preparing for a colonoscopy, as a general rule you should avoid any red/purple staining ingredients, such as beetroot and tomato. Avoid root vegetables that go mushy and make soup cloudy, such as potato and pumpkin. And of course, avoid chili (you don’t want any burning on the toilet, do you?!). Other than that, you should be good to go.
Vegetable Broth Clear Liquid Diet
Cooking Time: 1 hour 10 minutes
Servings: 4
Ingredients
- 3 qts (2.8L) water
- 1 red onion, quartered
- 1 garlic clove, sliced
- 1 thumb-size piece of ginger, sliced
- 1 cup fresh kale or spinach
- 4 cups (500g) chopped ‘permitted’ vegetables of your choice*
- ½ cup dried shiitake mushrooms
- A bunch of fresh coriander
- 1 Tbsp dried wakame seaweed
- 2 Tbsp ground turmeric
- 2 tsp peppercorns
- Salt to taste
Method
- Place all ingredients in a large stock pot.
- Bring to the boil, then reduce the heat to a low and cook for about 1 hour.
- Once everything has been thoroughly cooked and reduced to a syrupy consistency, remove from heat.
- Strain the soup through a fine-mesh sieve to remove all solids (vegetables, spices). If there is any remaining residue, strain the soup again through cheesecloth or coffee filter paper. Discard or compost solids.
- Taste the soup, and season with salt as desired.
- Serve immediately or transfer to containers for storage.

When choosing vegetables, be sure to pick ones that are safe to eat on a clear liquid diet. Below is a quick guide and reminder.
- GOOD: zucchini, capsicum, broccoli, cauliflower, carrot, celery, cabbage (not red)
- AVOID: potato, pumpkin, sweet potato or other veg that goes mushy and cloudy (these can’t be strained out)
- AVOID: red/purple staining veg such as beetroot or tomato, if you are preparing for colonoscopy.
- AVOID: chili
