Lime, Cucumber & Mint Frozen Mojito

A variation on our zesty limeade slushie, this non-alcoholic mojito fancies it up with crisp cucumber and cooling mint.

Lime, Cucumber Mint Frozen Mojito alcohol free

Great for a hot summer’s day, as well as hydrating and cooling down your body during a day of colonoscopy preparation or colon surgery recovery.

Feel free to adjust the cordial to your personal taste, and if you like, add an extra 1-2 tsp sugar per serve if you like it sweeter. If adding sugar, mix it well with the water to dissolve it, before mixing it in with the other ingredients.

When you come off your clear liquid diet, try it with a shot of white rum per serve if your diet allows, for a real mojito experience with a twist. Even if you’re just making it for yourself, I recommend that you prepare 4 serves (or more), and keep the ice cubes in the freezer until you need them.

Resist the temptation of adding alcohol if you are drinking this pre-colonoscopy. Alcohol is off-limits during colonoscopy prep, because it is dehydrating and may interfere with medications. This non-alcoholic variation is just as refreshing and flavorsome without it.

Lime, Cucumber and Mint Frozen Mojito (Alcohol Free)

Cooking Time: 20 minutes + Overnight freezing

Serves: 4

Ingredients (4 serves):

  • 2 cups water
  • 4 limes, juiced
  • 1 slicing cucumber (approx. 6-9 inches)
  • 1 handful mint leaves (approx. 10-15 leaves)
  • 4 fl oz (120mL) natural lime cordial, or more to taste
  • 500mL sparkling water

Instructions:

  • Peel, then juice the cucumber using a juicing machine. Alternatively, process it in a food processor, and strain through a strainer or cheese cloth to remove the solids.
  • Rinse, then finely crush mint leaves in a mortar and pestle, until it forms a paste. Ensure there are no large pieces of mint leaves remaining.
  • In a jug, mix the cucumber juice, water, mint paste, lime juice and lime cordial.
  • Transfer liquid to ice cube trays, and freeze overnight. You could freeze it as one big block, but your blender will handle it better if you freeze it into smaller pieces.
  • When ready to serve, transfer the ice cubes to a blender or food processor, and chop until it becomes a slushy consistency.
  • Divide the slushie between serving glasses, and top up with sparkling water.
